Mathys Detourbet, born in Troyes on 29 April 2007, began playing football at ES Municipaux Troyes before joining ESTAC in 2015. Developed within the Aube-based club, he completed all of his training there until signing his first professional contract on 8 May 2025. A few months earlier, on 15 January, he played his first minutes with the first team in a Coupe de France match against Stade Rennais, won 1-0.
